Beef with black pepper sauce

Ingredient:

– Beef tenderloin or fillet: 400g

– Chicken eggs: 1 egg

– Oyster sauce, soy sauce, sugar, white pepper, cooking oil, tapioca flour, black soy sauce, onion, ginger, garlic, sesame oil, pepper.

Preparation:

Step 1:

Beef washed, cut into pieces, 0.5 cm thick.

Onions washed, cut into small pieces. Wash peppercorns, pound them in half.

Ginger, garlic washed, smashed.

Marinate the beef, mix the beef with the following mixture: 1 tablespoon oyster sauce, 1 teaspoon soy sauce, 1/2 teaspoon sugar, 1/2 teaspoon white pepper, 1/2 tablespoon cooking oil , egg whites, 1/2 tablespoon tapioca flour mixed with 1/2 bowl of water to eat baby rice, 1 teaspoon black soy sauce. Mix and marinate for 15 minutes.

Step 2:

Put the marinated beef in a stainless steel strainer, squeeze out the water, put it in a pan of boiling cooking oil, when it’s dry, take it out immediately (salt can be used to scoop up the hot cooking oil).

Make the sauce: Stir-fry the crushed ginger, garlic, and pepper, add to the following mixture: 1 tablespoon cooking oil, 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 salt broth, 1/2 teaspoon sugar coffee, 1/2 teaspoon black soy sauce (or water).

Mix well, when boiling, add onion, beef and mix well.

Mix 3 tablespoons of tapioca starch into half a bowl of rice water, gradually mix the tapioca starch into the pan, finally add 1/2 teaspoon of sesame oil, about to serve on a plate.

Serve hot during the meal.
