Ingredients:
6 oz. jarred roasted red bell peppers; chopped.
12 eggs; whisked
2 tbsp. chives; chopped.
16 potato wedges
6 tbsp. ricotta cheese
1/2 cup parmesan; grated
3 garlic cloves; minced
2 tbsp. parsley; chopped.
Salt and black pepper to the taste

Preparation:
Potato frittata is a delicious and easy dish that can be enjoyed for breakfast, lunch, or dinner.
To make potato frittata, simply combine eggs, red peppers, garlic, parsley, salt, pepper, and ricotta in a bowl. Then heat your air fryer to 300°F and grease with frying spray. Place half of the potato wedges on the bottom of the fryer, then top with half of the parmesan.
Add half of the egg mixture, the remaining potatoes, and the remaining parmesan cheese.
Finally, top with chives and simmer for 20 minutes.
Potato frittata is a nutritious and satisfying meal that the whole family will enjoy.
