How to cook Spinach Parcels

1 lb. baby spinach leaves; roughly chopped

4 sheets filo pastry
1/2 lb. ricotta cheese
2 tbsp. pine nuts
1 eggs; whisked
Zest from 1 lemon; grated
Greek yogurt for serving
Salt and black pepper to the taste
1. Spinach, cheese, egg, lemon zest, salt, pepper, and pine nuts should all be combined in a dish with spinach.

2. Lay out the filo sheets on a work surface. Divide the spinach mixture into equal portions. Fold the spinach mixture diagonally to form your parcels. Place the parcels in the 400°F preheated air fryer.

3. Greek yogurt is served alongside the baked packages, which are divided among plates after 4 minutes of baking.
